My Egg Curry Recipe

 I am not a food blogger, but I thought why not try everything once? So here is a simple egg curry recipe. 

Boil 3 eggs. Peel and set aside.

In a deep pan (like a kadhai shown here), heat two tablespoons of oil. Add two chopped onions, two green chillies, half-inch chopped  ginger, one teaspoon turmeric powder. Fry for two or three minutes, stirring. Then add ginger garlic paste, one teaspoon coriander powder, half a teaspoon cumin powder, half a teaspoon red chilli powder, and stir fry. If it's sticking to the pan, add a dash of water. Add one chopped tomato. Fry for two or three minutes, add water and boil. Add salt to taste, and chopped green coriander. 

Cut the eggs in half, and slip them into the gravy. Cover them with gravy and set aside for a few minutes. Enjoy with steamed rice.

The final product. I like the red colour. You can try some cream at the end if you want it less "hot" but in my view, this tastes better with rice.


Slip the eggs in and cover with gravy.
